Enjoy a kind taste of the South with vegan comfort food [The Broccoli Bulletin]

Most people would think that vegan comfort food is an impossibility, but I can tell you that it is very possible and easy to enjoy comfort food sans animal products. Comfort food is my favorite, so naturally my boyfriend and I signed up to attend Christy Morgan’s “Southern Comfort Foods” cooking class last week.

As she was setting up and welcoming us, Morgan explained her comfort food classes are popular around the area because Texas and the South are known for such foods. During the class, the chef showed us how to make healthy versions of traditional Southern foods from her cookbook, Blissful Bites . As always, Morgan’s demonstration was lively, humorous and informative. One of my favorite parts of the night was when she recommended we go home and eat some kale after the class because she realized she didn’t include any greens in the class menu.

Throughout the class, Morgan encouraged us to tweak the recipes and create our own. She reminded everyone cooking is not about following recipes but about tasting the food and having fun. My mom would definitely agree, and the more I’ve learned about cooking throughout the years, the more I see this to be true!
