Indulge your sweet tooth with your sweetheart [Broccoli Bulletin]

A natural aphrosdiac, chocolate is one of the most beloved ingredients in the realm of dessert. It’s no wonder that it tends to be gifted as a symbol of affection — everyone loves it.

Nothing beats chocolate (except maybe pizza), so here is a recipe for chocolate mousse to impress your date on Valentine’s Day. With only three ingredients (and no refined sugar!), you can whip up this elegant dessert that will melt deliciously in your mouth.

Before you begin, I highly suggest watching this video to visualize what the consistency of your mousse should look like, because it is really easy to overmix it. At least it is for me...because I love using the whisk.

 

Chocolate Mousse | A Simple Luxury

(adapted from Cenk Sönmezsoy’s recipe, which was inspired by Hervé This and Heston Blumenthal)

This recipe yields two modest servings, but if you’d like to make more, just double or triple the recipe.

Ingredients:

  • 133 grams semisweet chocolate (at least 70% cocoa), chopped into uniform pieces
  • ½ cup water, scant or not a full measurement. I measured ½ cup of water and removed about two tablespoons of water
  • 2 tablespoons agave nectar

A note about what kind of chocolate to use:

The purity of the mousse’s chocolate flavor depends on the quality of dark chocolate used, so the recipe is not guaranteed to work if you use chocolate that is less than 70% cocoa. I used Chocolove’s 70 percent dark chocolate. Each bar is 90.7 grams, and after doing some math, I used a little less than one and a half bars (about 26.5 little measured squares).

Instructions:

  1. Prepare an ice bath in a bowl and stack another bowl on top of it, so the ice makes contact with the bowl’s bottom. The sizes don’t matter, as long as the top bowl fits comfortably in the bottom bowl. Set them aside for later — I would suggest chilling them in the fridge while you complete the next step.
  2. Using a small sauce pan, melt all the ingredients over medium heat and stir to blend them together.
  3. Take the bowls from step one, keeping the stacked arrangement, pour the chocolate mixture into the topmost bowl. With a wire wisk, start whisking the mixture. It might seem hopeless at first...it will take a few minutes for it to thicken into a mousse and your arm may get a little tired, but persistence will result in a silky beautiful mousse. You can also use an electric mixer, but then you might overmix it and it will be grainy. If it does become grainy, it’s easily remedied — just pour your mousse back into the saucepan, remelt at least half of it, and try again.
  4. Transfer your mousse into shallow glass bowls and serve! Garnish with berries and nuts, if you like!
